Notes from the Winemaker

HARVEST

The harvest has been characterized by alternating light rainfall during the spring and again after the ripening period (late August), with a severe drought during the ripening period itself. This situation has primarily caused a drop in production, which in turn leads to an increase in concentration and quality. The vineyards used in the production of this wine are 15 years old and have been farmed organically since planting, registered under organic farming controls since they first came into production.

WINEMAKING

All wines produced at Bodegas Verdeal are made using organic methods that respect every stage of the production cycle. To achieve this, we use natural and organic techniques to enhance aromatic intensity, body on the palate, and the wine's natural antioxidant protection during both fermentation and aging. Our techniques include extended settling to increase contact between the grape solids and the must, thereby boosting the grape's natural aromatic precursors. Fermentation is carried out using live yeasts reproduced under natural pH conditions, without molasses or agrochemicals. This type of yeast preserves its enzymatic capabilities and proton pump intact, naturally maintaining and enhancing the wine's acidity during production and avoiding the need for external additives or corrections. Clarification is performed using treated bentonites that do not introduce heavy metals into the wine, allowing us to reduce the total sulfite levels in the final product. After fermentation, the wines are kept in contact with fine lees for a period of time to enhance the wine's structural characteristics, contributing fatty acids and a broader, more glyceric mouthfeel.

TASTING NOTES

Visual: Greenish-yellow color with medium intensity. Clear, bright, and very attractive.

Nose: A wine with high aromatic intensity. It presents powerful stone fruit aromas (peach, apricot) and tropical fruit notes, with subtle citrus hints (lime and grapefruit). These aromas are complemented in the background, but with great presence, by spiced notes that add elegance, as well as herbal tones (hay, fig leaf), finishing with a very varietal hint of fennel.

Palate: A very well-balanced wine that delivers sensation at every moment. It has a good acidity that brings freshness and wraps the wine in a rich, fat perception, adding great volume. Long and powerful finish. Retronasal with herbal and spiced notes and a distinct presence of citrus (grapefruit and lime).
